
Pasha Roasted Chicken
There could never be enough chicken recipes. I know I've said it before but roasted chicken is a staple at our table. Pasha has a well-rounded blend of Urfa, sumac, and oregano.

8 chicken thighs (bone in and skin on) or 4 leg quarters separated
2 fuji apples, cut in 6 wedges, cores removed
2 onions, cut in 6 wedges
4 carrots, peeled and cut into 1" pieces
2 Tbsp Pasha spice
1/4 cup silan
Salt
Olive oil
Preheat the oven to 400°F.
Season the chicken, vegetables, and apple with Pasha, silan, salt, and olive oil to coat and place it in a roasting pan or baking tray.
Roast for 35-45 minutes, or until the chicken and vegetables are tender.
If you are looking for a crispy skin place the pan under the broiler for 3 to 4 minutes for an extra char and crunch.
Enjoy.
I like to baste the chicken and vegetables every 15 minutes to season and help the vegetables cook evenly. Stirring and basting helps everything get good roasted flavor.
Add a layer of thinly sliced sweet potatoes under the chicken for a one pan meal.
The recipe divides well for smaller groups.
