Sesame Strawberry Tiramisu
I love tiramisu and I can never get enough of it. This delicate version is refined with nutty sesame, ethereal cardamon, floral moments of rose, and gentle fresh strawberry syrup. It is a sweet dream of tiramisu that you should learn to make if you love your mother and/or your significant other.

Ingredients
24 lady fingers
2 cups heavy cream
8 oz cream cheese (1 block)
½ cup sugar, divided

1 Tbsp Desert Rose
-
6 Tbsp tahina
½ cup water

pinch of salt
1 pound fresh strawberries, washed and trimmed
2 Tbsp lemon juice

2 Tbsp Strawberry Vinegar or more lemon juice
2 Tbsp sugar
1 cup water

1/8 tsp fine sea salt

2 Tbsp Desert Rose

Directions
For the syrup, cut any large strawberries in half and blend the syrup ingredients to liquify.
This step can be done up to 3 days in advance.
Whip the heavy cream with half of the sugar and a pinch of salt to medium stiff peaks and set aside.
Using a mixer fitted with a whisk attachment, whisk the cream cheese, remaining sugar, Desert Rose, tahina, water, and pinch of salt to combine well. The mixture should be completely smooth.
Fold in the whipped cream, divide the mixture in half, and set aside.
Soak half of the lady fingers in the strawberry syrup for 1 minute, turning halfway.
Into a 9”x9” square pan, lay the soaked ladyfingers – sugared side down.
Spread half of the Desert Rose cream mixture into the pan on top of the soaked lady fingers. Even out the surface in preparation for the next layer.
Soak the remaining half of lady fingers in the strawberry syrup for 1 minute, turning halfway.
Lay the soaked ladyfingers into the pan – again sugared side down.
Spread the rest of the Desert Rose cream mixture into the pan on top of the soaked lady fingers, evening out the surface.
Sprinkle 2 tablespoons of Desert Rose evenly over the top of the cream layer.
Cover and refrigerate overnight (up to 3 days) to allow the tiramisu to set.
Serve chilled.

If you don’t have fresh strawberries, you could try making the syrup with frozen strawberries. Make sure to taste the syrup and adjust accordingly for sweetness and tartness.
Laying the lady fingers sugared side down helps the strawberry syrup sink into the fingers while hydrating in the assembled cake.
Variations and Ideas
Raspberries could be a nice option for the strawberry syrup, you will need to strain the syrup to remove the seeds.
If you like the spikey sweet flavor of Sichuan peppercorn and lime, substituting Orchidea would delicious as well. Orchidea with raspberry is another good paring.
