Spring Tonic
I infuse Old Tom gin with our Curcumade blend to add earthiness and a subtle spice, then combine it with tonic and Kumquat Compote for a refreshing cocktail that's still perfect for a cooler day.

Ingredients

2 tsp Kumquat Compote
2 ounces of Old Tom gin*

Pinch of Curcumade
Tonic and/or seltzer (if you prefer a drier drink)
Directions
In a 12 ounce Collins glass, add the Kumquat Compote and fill with ice.
Add the gin and curcumade to a cocktail shaker filled with ice. Shake until cold and strain into the Collins glass.
Add tonic and/or seltzer to fill, add a straw, then give the drink a single sharp stir with the straw to mix. The kumquats at the bottom are a nice treat at the end so I like serving this with a spoon straw to make them easier to eat.

* Old Tom gin is a gin that has been barrel aged, it will have subtle hints of vanilla and baking spices from the wood.
Variations & Ideas
• Alcohol free: Muddle 1/2 teaspoon of juniper berries, a half-inch piece of vanilla bean, and a pinch of cayenne with 2 ounces of seltzer water to extract the aromatics, and use this in place of the Old Tom gin.
