Catskill Provisions
Launched in 2010, Catskill Provisions, founded by Claire Marin, made a name for itself with their raw wildflower fall honey, a product beloved by many chefs and restaurants in the New York area. Since then, Catskill has expanded its array of products to include spirits, chocolates, syrup, and even waffle mix.
In collaboration with La Boite, Catskill Provision's Herbed Honey Cider Vinegar is made from apples from local orchards, wildflower honey, and La Boite's Luberon spice blend. This slightly sweet vinegar product is balanced by honey and complex notes of herbs from the spices in Luberon.
