Higbee Muffins

From customer and newsletter reader Karen Yossef, these are a recipe from her childhood, muffins served at the now shuttered Higbee’s department store in Cleveland Ohio. Her sister got the recipe before they closed and they’ve been making them ever since. Her twist is adding our Smoked Cinnamon N.18 to the recipe. They couldn’t be simpler and are a great treat.

Recipe by Higbee’s Department Store – Modified by Karen Yossef

Makes approximately 2 dozen muffins


4          cups all purpose flour

2          Tablespoons baking powder

1½      teaspoons salt

1          cup sugar

3          teaspoons Smoked Cinnamon N.18

1½      cups milk (she uses cashew milk)

2          beaten eggs

1          cup butter (2 sticks, melted)


1. Preheat oven to 375 degrees F. Line muffin tins unless you are using silicone ones, then spray will suffice.

2. In a large bowl sift together the dry ingredients. Mix in the milk and eggs and stir with a fork. Stir in the butter and pour the batter into the muffin tins.

3. Bake for 25 minutes or until an inserted toothpick comes out clean.
