Change your spices, change your dish. A classic roast chicken is enhanced and enlivened by my Mediterranean Lemon blend.
Ingredients
3–4-pound whole chicken

2 Tbsp Mediterranean Lemon spice
1 lemon
2 onions
2 shallots
2 stalks celery
Kosher salt

Black pepper
Directions
Preheat oven to 425 degrees
Cut 1 onion, shallots, and celery medium dice, mix and place in the bottom of roasting pan for the chicken to cook on.
Cut lemon and the other onion into pieces small enough to fit into the chicken
Season the entire chicken generously with Mediterranean Lemon, salt, and black pepper (including the cavity)
Add the lemon and onion to the chicken and place it on top of the vegetables in the roasting pan
Roast for 1 hour
Allow to rest for 15 minutes, then carve and serve
