Very interesting but familiar smell, reminiscent of the Georgian spice blend, Khmeli Suneli - the aroma goes well with lamb or chicken dishes - leaves crushed into the ground meat or sprinkled on top for pan braising. Good spice!
I've always wanted to try cooking with Fenugreek. Loving it. Herby and maple-y. Added to pulled pork. Fabu!!!
